  • 6 oz pasta of your choice
  • ½ cup fresh basil leaves
  • ½ 1/3 cup pine nuts or walnuts
  • 1 cloves garlic
  • ½ 1/2 cup grated Parmesan cheese
  • ½ 1/3 cup olive oil
  • ½ Salt and pepper to taste
  • ½ cup cherry tomatoes, halved
  • ½ 1/2 cup heavy cream
  • ½ 1/4 cup grated Parmesan cheese
  • ½ Fresh basil leaves for garnish

Instructions

  1. Cook the pasta according to package instructions. Reserve 1/2 cup of pasta water before draining.
  2. In a food processor, combine basil, pine nuts, garlic, Parmesan cheese, olive oil, salt, and pepper. Blend until smooth to make the pesto sauce.
  3. In a large skillet, heat the pesto sauce over low heat. Stir in the heavy cream and grated Parmesan cheese.
  4. Add the cooked pasta and cherry tomatoes to the skillet. Toss to coat the pasta evenly, adding reserved pasta water as needed to loosen the sauce.
  5. Cook for an additional 2-3 minutes until the sauce thickens slightly and tomatoes soften.
  6. Serve the creamy pesto pasta hot, garnished with fresh basil leaves and extra Parmesan cheese.
