- ½ cup fresh basil leaves
- ½ 1/3 cup pine nuts or walnuts
- 1 cloves garlic
- ½ 1/2 cup grated Parmesan cheese
- ½ 1/3 cup olive oil
- ½ Salt and pepper to taste
- ½ cup cherry tomatoes, halved
- ½ 1/2 cup heavy cream
- ½ 1/4 cup grated Parmesan cheese
- ½ Fresh basil leaves for garnish
Instructions
- Cook the pasta according to package instructions. Reserve 1/2 cup of pasta water before draining.
- In a food processor, combine basil, pine nuts, garlic, Parmesan cheese, olive oil, salt, and pepper. Blend until smooth to make the pesto sauce.
- In a large skillet, heat the pesto sauce over low heat. Stir in the heavy cream and grated Parmesan cheese.
- Add the cooked pasta and cherry tomatoes to the skillet. Toss to coat the pasta evenly, adding reserved pasta water as needed to loosen the sauce.
- Cook for an additional 2-3 minutes until the sauce thickens slightly and tomatoes soften.
- Serve the creamy pesto pasta hot, garnished with fresh basil leaves and extra Parmesan cheese.
