Instructions
- Preheat the oven to 375°F (190°C) and line baking sheets with parchment paper.
- In a large bowl, cream together butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until well combined.
- Shape the dough into 24 equal-sized balls. Roll each ball in granulated sugar and place them 2 inches apart on the prepared baking sheets.
- Bake for 8-10 minutes or until the edges are lightly golden.
- Immediately press a chocolate kiss into the center of each cookie. Transfer the cookies to a wire rack to cool completely.
