Mediterranean Roasted Chicken

A flavorful and aromatic whole roasted chicken infused with Mediterranean herbs and spices, perfect for a family dinner for four.

Ingredients(scaled)

  • ½ whole chicken (about 4-5 lbs)
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • ½ lemon, sliced
  • ½ tbsp dried oregano
  • ½ tbsp dried thyme
  • ½ tbsp dried rosemary
  • ½ tsp paprika
  • ½ Salt and pepper to taste
  • ½ 1/2 cup chicken broth or water

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Rinse the chicken inside and out; pat dry with paper towels.
  3. In a small bowl, mix olive oil, minced garlic, dried herbs, paprika, salt, and pepper.
  4. Rub the herb mixture all over the chicken, including under the skin and inside the cavity.
  5. Place lemon slices inside the cavity of the chicken.
  6. Tie the legs together with kitchen twine and tuck the wings under the body.
  7. Place the chicken breast side up on a roasting pan or baking dish.
  8. Pour chicken broth or water into the pan.
  9. Roast the chicken in the preheated oven for about 1 hour 30 minutes or until the internal temperature reaches 165°F (74°C).
  10. Baste the chicken with pan juices every 30 minutes.
  11. Let the chicken rest for 10-15 minutes before carving.
  12. Serve the Mediterranean roasted chicken with your favorite sides.
