Mediterranean Roasted Chicken

- ½ whole chicken (about 4-5 lbs)
- 2 tbsp olive oil
- 2 cloves garlic, minced
- ½ lemon, sliced
- ½ tbsp dried oregano
- ½ tbsp dried thyme
- ½ tbsp dried rosemary
- ½ tsp paprika
- ½ Salt and pepper to taste
- ½ 1/2 cup chicken broth or water
Instructions
- Preheat the oven to 375°F (190°C).
- Rinse the chicken inside and out; pat dry with paper towels.
- In a small bowl, mix olive oil, minced garlic, dried herbs, paprika, salt, and pepper.
- Rub the herb mixture all over the chicken, including under the skin and inside the cavity.
- Place lemon slices inside the cavity of the chicken.
- Tie the legs together with kitchen twine and tuck the wings under the body.
- Place the chicken breast side up on a roasting pan or baking dish.
- Pour chicken broth or water into the pan.
- Roast the chicken in the preheated oven for about 1 hour 30 minutes or until the internal temperature reaches 165°F (74°C).
- Baste the chicken with pan juices every 30 minutes.
- Let the chicken rest for 10-15 minutes before carving.
- Serve the Mediterranean roasted chicken with your favorite sides.
