Ingredients(scaled)

  • 2 pieces small flour tortillas (4-inch)
  • 2 oz sliced turkey breast
  • 2 slices mild cheddar cheese
  • ½ tablespoon olive oil
  • 1 cups assorted fruit wedges (melon, pineapple, grapes)

Instructions

  1. Preheat a large skillet over medium heat and brush with olive oil; you should see a light shimmer.
  2. Lay 1 tortilla in the skillet, top with 1 oz turkey and 1 slice cheddar, then cover with a second tortilla.
  3. Cook 2-3 minutes per side, until the cheese is melted and the tortillas are golden brown.
  4. Transfer to a warm plate and repeat with the remaining fillings.
  5. Cut each quesadilla into wedges and serve with the fruit wedges on the side.
