- 2 boneless, skinless chicken breasts
- ½ Salt and pepper to taste
- 1 tablespoons olive oil
- 2 slices fresh mozzarella cheese
- 1 large tomatoes, sliced
- ½ 1/4 cup fresh basil leaves
Instructions
- Season chicken breasts with salt and pepper on both sides.
- In a large skillet, heat olive oil over medium-high heat.
- Add chicken breasts to the skillet and cook for about 6-7 minutes per side or until fully cooked.
- Top each chicken breast with a slice of mozzarella cheese and cover the skillet until the cheese is melted.
- Place tomato slices on top of the melted cheese.
- Cover the skillet again for a couple of minutes to allow the tomatoes to warm up.
- Garnish with fresh basil leaves before serving.
