Caprese Chicken Skillet

Ingredients(scaled)

  • 2 boneless, skinless chicken breasts
  • ½ Salt and pepper to taste
  • 1 tablespoons olive oil
  • 2 slices fresh mozzarella cheese
  • 1 large tomatoes, sliced
  • ½ 1/4 cup fresh basil leaves

Instructions

  1. Season chicken breasts with salt and pepper on both sides.
  2. In a large skillet, heat olive oil over medium-high heat.
  3. Add chicken breasts to the skillet and cook for about 6-7 minutes per side or until fully cooked.
  4. Top each chicken breast with a slice of mozzarella cheese and cover the skillet until the cheese is melted.
  5. Place tomato slices on top of the melted cheese.
  6. Cover the skillet again for a couple of minutes to allow the tomatoes to warm up.
  7. Garnish with fresh basil leaves before serving.
