Grilled Veggie Skewers

Ingredients(scaled)

  • ½ red bell pepper, cut into chunks
  • ½ yellow bell pepper, cut into chunks
  • ½ zucchini, sliced
  • ½ red onion, cut into chunks
  • 4 oz mushrooms, whole or halved
  • ½ 1/4 cup olive oil
  • 1 cloves garlic, minced
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • ½ 1/2 tsp paprika
  • ½ Salt and pepper to taste
  • ½ Wooden skewers, soaked in water

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, mix olive oil, garlic, oregano, basil, paprika, salt, and pepper.
  3. Thread the vegetables onto the skewers, alternating between the different vegetables.
  4. Brush the vegetable skewers with the olive oil mixture, ensuring they are well coated.
  5. Place the skewers on the grill and cook for about 10 minutes, turning occasionally, until the vegetables are tender and slightly charred.
  6. Remove from the grill and serve hot.
