- ½ red bell pepper, cut into chunks
- ½ yellow bell pepper, cut into chunks
- ½ zucchini, sliced
- ½ red onion, cut into chunks
- 4 oz mushrooms, whole or halved
- ½ 1/4 cup olive oil
- 1 cloves garlic, minced
- ½ tsp dried oregano
- ½ tsp dried basil
- ½ 1/2 tsp paprika
- ½ Salt and pepper to taste
- ½ Wooden skewers, soaked in water
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, mix olive oil, garlic, oregano, basil, paprika, salt, and pepper.
- Thread the vegetables onto the skewers, alternating between the different vegetables.
- Brush the vegetable skewers with the olive oil mixture, ensuring they are well coated.
- Place the skewers on the grill and cook for about 10 minutes, turning occasionally, until the vegetables are tender and slightly charred.
- Remove from the grill and serve hot.
