Espresso Martini Cake with Kahlua Ermine Frosting

A 4-serving cake inspired by espresso martinis: rich chocolate sponge with strong coffee notes, layered with a silky Kahlua ermine frosting. The ermined frosting is lighter and less sweet than traditional buttercream, finished with a glossy ganache drizzle for a restaurant-style dessert.

Ingredients(scaled)

  • ½ cup all-purpose flour
  • ½ 1/4 cup cocoa powder (unsweetened)
  • ½ 1/2 cup granulated sugar
  • ½ 1/2 tsp baking soda
  • ½ 1/4 tsp salt
  • 1 large eggs
  • ½ 1/2 cup milk
  • ½ 1/4 cup melted butter
  • ½ 1/4 cup strong brewed espresso, cooled
  • ½ tsp vanilla extract
  • ½ 1/4 cup chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a small round cake pan; set aside.
  2. Whisk flour, cocoa, sugar, baking soda, and salt in a bowl until combined.
  3. In another bowl, whisk eggs, milk, melted butter, espresso, and vanilla until smooth.
  4. Pour wet into dry; mix just until no dry streaks; fold in chocolate chips if using.
  5. Pour batter into pan; bake 22–28 minutes until a toothpick comes out with few crumbs.
  6. Cool 10 minutes in pan, then turn out onto rack to cool completely.
  7. Prepare Kahlua ermine frosting while cake cools (see steps 8–12).
  8. Spread frosting evenly over the cooled cake; chill 15 minutes to set.
  9. Finish with a light dusting of cocoa or shaved chocolate and serve.

Chef’s Pro Tips

  • For a stronger coffee taste, brush the cake with a splash of espresso before frosting.
  • If you want a glossy finish, add a thin ganache drizzle on top.
  • Chill the frosting briefly to ease spreading and achieve a smoother finish.

Serving Suggestions

Serve with a tiny espresso or coffee liqueur on the side for an extra martini vibe; pair with a light vanilla whipped cream if desired.
