Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • 4 slices fresh mozzarella cheese
  • 1 large tomato, sliced
  • 1 8-10 fresh basil leaves
  • 2 tablespoons balsamic glaze
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Butterfly the chicken breasts and season with salt, pepper, and Italian seasoning.
  3. Layer each chicken breast with 2 slices of mozzarella, tomato slices, and basil leaves.
  4. Fold the chicken breasts over to close the stuffing and secure with toothpicks if needed.
  5. Heat olive oil in an oven-safe skillet over medium-high heat.
  6. Sear the chicken breasts for 2-3 minutes per side until golden brown.
  7. Transfer the skillet to the oven and bake for 15-20 minutes or until the chicken is cooked through.
  8. Drizzle balsamic glaze over the chicken before serving.
  9. Remove toothpicks before serving.
