- 2 cups cubed watermelon
- ½ 1/2 cup crumbled goat cheese
- ½ 1/4 cup fresh mint leaves, chopped
- 1 tbsp balsamic glaze
- ½ tbsp extra virgin olive oil
- ½ Salt and pepper to taste
Instructions
- In a large bowl, combine the cubed watermelon and chopped mint leaves.
- Drizzle olive oil over the watermelon and mint, and gently toss to coat.
- Season with salt and pepper to taste.
- Transfer the watermelon and mint mixture to a serving plate or bowl.
- Sprinkle crumbled goat cheese over the top of the salad.
- Drizzle balsamic glaze over the salad just before serving.
- Serve chilled and enjoy!
