Ingredients(scaled)

  • 2 cups cubed watermelon
  • ½ 1/2 cup crumbled goat cheese
  • ½ 1/4 cup fresh mint leaves, chopped
  • 1 tbsp balsamic glaze
  • ½ tbsp extra virgin olive oil
  • ½ Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cubed watermelon and chopped mint leaves.
  2. Drizzle olive oil over the watermelon and mint, and gently toss to coat.
  3. Season with salt and pepper to taste.
  4. Transfer the watermelon and mint mixture to a serving plate or bowl.
  5. Sprinkle crumbled goat cheese over the top of the salad.
  6. Drizzle balsamic glaze over the salad just before serving.
  7. Serve chilled and enjoy!
