  • ½ 3/4 cups milk
  • 1 large eggs
  • ½ 1/4 cup melted butter
  • ½ tsp vanilla extract
  • ½ cup fresh blueberries
  • ½ Butter or oil for cooking

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In another bowl, whisk the milk, eggs, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; it's okay if the batter is slightly lumpy.
  4. Gently fold in the blueberries.
  5. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  6. Pour 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, then flip and cook until golden brown.
  7. Repeat with the remaining batter, stacking the pancakes as you go to form a tower.
  8. Serve the blueberry pancake tower warm with maple syrup, extra blueberries, and a dusting of powdered sugar.
