Kabuli Pulao

Ingredients(scaled)

  • 1 cups basmati rice, soaked for 30 minutes and drained
  • ½ lb lamb or chicken, cut into pieces
  • ½ large onion, thinly sliced
  • ½ 1/2 cup vegetable oil
  • ½ 1/2 cup raisins
  • ½ 1/2 cup shredded carrots
  • ½ 1/4 cup slivered almonds
  • 2 cups chicken or beef broth
  • ½ tsp ground cardamom
  • ½ tsp ground cinnamon
  • ½ 1/2 tsp ground cloves
  • ½ 1/2 tsp ground cumin
  • ½ Salt and pepper to taste

Instructions

  1. In a large pot, heat vegetable oil over medium heat and sauté the sliced onions until golden brown. Remove half for garnish.
  2. Add the meat to the pot and brown on all sides. Season with salt, pepper, and the ground spices.
  3. Pour in the broth and bring to a boil. Reduce heat, cover, and simmer until the meat is tender, about 30-40 minutes.
  4. In a separate pan, fry the carrots until caramelized, then remove and set aside. Fry the raisins until plump, then remove and set aside.
  5. Remove the cooked meat from the broth and set aside. Measure the broth and add more water if needed to cook the rice. Bring the broth to a boil.
  6. Add the soaked and drained rice to the boiling broth. Cook until the rice is almost done and most of the liquid is absorbed.
  7. Layer the partially cooked rice with the meat, fried carrots, raisins, slivered almonds, and the reserved fried onions in a pot. Cover and cook on low heat for another 20 minutes until the rice is fully cooked and fluffy.
  8. Serve the Kabuli Pulao hot, garnished with additional fried onions and almonds.
