Kabuli Pulao

- 1 cups basmati rice, soaked for 30 minutes and drained
- ½ lb lamb or chicken, cut into pieces
- ½ large onion, thinly sliced
- ½ 1/2 cup vegetable oil
- ½ 1/2 cup raisins
- ½ 1/2 cup shredded carrots
- ½ 1/4 cup slivered almonds
- 2 cups chicken or beef broth
- ½ tsp ground cardamom
- ½ tsp ground cinnamon
- ½ 1/2 tsp ground cloves
- ½ 1/2 tsp ground cumin
- ½ Salt and pepper to taste
Instructions
- In a large pot, heat vegetable oil over medium heat and sauté the sliced onions until golden brown. Remove half for garnish.
- Add the meat to the pot and brown on all sides. Season with salt, pepper, and the ground spices.
- Pour in the broth and bring to a boil. Reduce heat, cover, and simmer until the meat is tender, about 30-40 minutes.
- In a separate pan, fry the carrots until caramelized, then remove and set aside. Fry the raisins until plump, then remove and set aside.
- Remove the cooked meat from the broth and set aside. Measure the broth and add more water if needed to cook the rice. Bring the broth to a boil.
- Add the soaked and drained rice to the boiling broth. Cook until the rice is almost done and most of the liquid is absorbed.
- Layer the partially cooked rice with the meat, fried carrots, raisins, slivered almonds, and the reserved fried onions in a pot. Cover and cook on low heat for another 20 minutes until the rice is fully cooked and fluffy.
- Serve the Kabuli Pulao hot, garnished with additional fried onions and almonds.
