Ingredients(scaled)

  • ½ whole chicken (about 4 lbs)
  • 1 tbsp olive oil
  • 1 tbsp Cajun seasoning
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ 1/2 tsp thyme
  • ½ 1/2 tsp oregano
  • ½ 1/2 tsp cayenne pepper (adjust to taste)
  • ½ Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Rinse chicken and pat dry. Rub with olive oil inside and out.
  3. In a small bowl, mix Cajun seasoning, paprika, garlic powder, onion powder, thyme, oregano, cayenne, salt, and pepper.
  4. Rub spice mixture all over the chicken, including under the skin.
  5. Place chicken on a roasting pan breast side up.
  6. Roast for about 1 hour 30 minutes or until the internal temperature reaches 165°F (74°C).
  7. Let the chicken rest for 10–15 minutes before carving.
