- ½ whole chicken (about 4 lbs)
- 1 tbsp olive oil
- 1 tbsp Cajun seasoning
- ½ tsp paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ 1/2 tsp thyme
- ½ 1/2 tsp oregano
- ½ 1/2 tsp cayenne pepper (adjust to taste)
- ½ Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Rinse chicken and pat dry. Rub with olive oil inside and out.
- In a small bowl, mix Cajun seasoning, paprika, garlic powder, onion powder, thyme, oregano, cayenne, salt, and pepper.
- Rub spice mixture all over the chicken, including under the skin.
- Place chicken on a roasting pan breast side up.
- Roast for about 1 hour 30 minutes or until the internal temperature reaches 165°F (74°C).
- Let the chicken rest for 10–15 minutes before carving.
