Ingredients

  • 1 lb flank steak
  • 1 cup fresh parsley, chopped
  • 4 cloves garlic, minced
  • 1 1/2 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon fresh oregano, chopped
  • 1 teaspoon red pepper flakes
  • 1 Salt and pepper to taste

Instructions

  1. In a bowl, mix together the parsley, garlic, olive oil, red wine vinegar, oregano, red pepper flakes, salt, and pepper to create the chimichurri marinade.
  2. Place the flank steak in a resealable bag or shallow dish and pour the chimichurri marinade over it. Ensure the steak is coated evenly. Marinate in the refrigerator for at least 2 hours or overnight for maximum flavor.
  3. Preheat the grill to medium-high heat. Remove the steak from the marinade and discard excess marinade.
  4. Grill the flank steak for about 5-7 minutes per side, or until it reaches your desired level of doneness.
  5. Remove the steak from the grill and let it rest for 5 minutes before slicing against the grain.
  6. Serve the sliced chimichurri marinated flank steak with additional chimichurri sauce on the side. Enjoy!
