Spicy Maple Glazed Roast Chicken

- ½ whole chicken (about 4-5 lbs)
- 1 tbsp olive oil
- ½ Salt and pepper to taste
- ½ tsp paprika
- ½ 1/2 tsp cayenne pepper
- ½ 1/4 cup maple syrup
- 1 tbsp soy sauce
- 1 cloves garlic, minced
- ½ tsp grated ginger
- ½ tbsp apple cider vinegar
Instructions
- Preheat the oven to 375°F (190°C).
- Rinse the chicken inside and out, then pat dry with paper towels.
- In a small bowl, mix olive oil, salt, pepper, paprika, and cayenne pepper. Rub this mixture all over the chicken.
- Place the chicken breast side up on a rack in a roasting pan.
- Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C).
- In a saucepan, combine maple syrup, soy sauce, garlic, ginger, and apple cider vinegar. Bring to a simmer and cook for 5-7 minutes until slightly thickened.
- During the last 15 minutes of roasting, baste the chicken with the maple glaze every 5 minutes.
- Once the chicken is fully cooked, remove it from the oven and let it rest for 10 minutes before carving.
- Serve the spicy maple glazed roast chicken with any remaining glaze on the side.
