Spicy Maple Glazed Roast Chicken

Ingredients(scaled)

  • ½ whole chicken (about 4-5 lbs)
  • 1 tbsp olive oil
  • ½ Salt and pepper to taste
  • ½ tsp paprika
  • ½ 1/2 tsp cayenne pepper
  • ½ 1/4 cup maple syrup
  • 1 tbsp soy sauce
  • 1 cloves garlic, minced
  • ½ tsp grated ginger
  • ½ tbsp apple cider vinegar

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Rinse the chicken inside and out, then pat dry with paper towels.
  3. In a small bowl, mix olive oil, salt, pepper, paprika, and cayenne pepper. Rub this mixture all over the chicken.
  4. Place the chicken breast side up on a rack in a roasting pan.
  5. Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C).
  6. In a saucepan, combine maple syrup, soy sauce, garlic, ginger, and apple cider vinegar. Bring to a simmer and cook for 5-7 minutes until slightly thickened.
  7. During the last 15 minutes of roasting, baste the chicken with the maple glaze every 5 minutes.
  8. Once the chicken is fully cooked, remove it from the oven and let it rest for 10 minutes before carving.
  9. Serve the spicy maple glazed roast chicken with any remaining glaze on the side.
