  • ½ 1/2 cup pistachios, shelled

  • ½ cup vegetable broth
  • ½ lemon, zest and juice
  • 1 cups garlic-wried greens (collard or spinach, chopped)

Instructions

  1. Cook rigatoni in salted water until al dente, drain, reserve 1/2 cup pasta water.
  2. Sear tofu cubes in 1 tbsp oil until golden, 3-4 min per side; set aside.
  3. Blend basil, pistachios, garlic, parmesan (if using), lemon zest, 2 tbsp olive oil, and 1/4 cup broth until smooth.
  4. In same pot, add greens with a splash of oil, cook 2-3 min until wilted; season.
  5. Return pasta and tofu to pot, pour pistachio sauce and remaining broth; toss to coat.
  6. Finish with lemon juice, red pepper flakes, salt, and pepper; adjust with pasta water for creaminess.
