Ingredients(scaled)

  • 2 cups rotini or fusilli pasta
  • 1 cups cherry tomatoes
  • 1 tablespoons olive oil, divided
  • ½ teaspoon salt, divided
  • ½ 1/2 teaspoon black pepper
  • ½ pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 ½ cloves garlic, minced
  • ½ cup fresh basil leaves
  • ½ 1/2 cup grated parmesan cheese
  • ½ 1/4 cup pine nuts or walnuts
  • ½ 1/4 cup extra-virgin olive oil
  • ½ 1/4 cup packed fresh parsley leaves
  • ½ tablespoon lemon juice
  • ½ Red pepper flakes (optional, to finish)

Instructions

  1. Heat oven to 425°F. Toss tomatoes with 1 tablespoon olive oil, 1/2 teaspoon salt, and black pepper; roast 12–15 minutes until blistered.
  2. Cook pasta in salted boiling water until al dente; reserve 1/2 cup pasta water, then drain.
  3. Season chicken with 1/2 teaspoon salt and pepper. Sauté in a large skillet with 1 tablespoon olive oil over medium-high until cooked through, about 5–7 minutes; add garlic for 30 seconds until fragrant.
  4. Meanwhile, blend pesto: basil, Parmesan, pine nuts, 1/4 cup olive oil, parsley, lemon juice, and a pinch of salt until smooth.
  5. Toss hot pasta with pesto, chicken, and roasted tomatoes; add reserved pasta water a splash at a time to loosen sauce.
  6. Finish with extra Parmesan and a pinch of red pepper flakes if using; stir gently and serve hot.
  7. Preheat the oven and bake until golden and set; a toothpick should come out clean.
