Thai Basil & Lime Tofu Stir-Fry

Ingredients(scaled)

  • 7 oz (400g) firm tofu, cubed
  • 1 tbsp vegetable oil
  • 1 ½ cloves garlic, minced
  • ½ red chili, sliced
  • ½ red bell pepper, sliced
  • ½ cup fresh Thai basil leaves
  • ½ Juice of 2 limes
  • ½ tbsp soy sauce
  • ½ tsp sugar

Instructions

  1. Heat 1 tbsp oil over medium-high heat in a large pan or wok.
  2. Add tofu cubes; cook 5-7 min until golden, then remove and set aside.
  3. Add remaining oil; sauté garlic and chili until fragrant (~30 sec).
  4. Add bell pepper; stir-fry 2-3 min until tender-crisp.
  5. Return tofu; add soy sauce, sugar, lime juice, stir to coat and cook 1 min.
  6. Stir in basil leaves until wilted, then serve hot.

  • Press tofu to remove excess moisture for better browning.
