Thai Basil & Lime Tofu Stir-Fry

- 7 oz (400g) firm tofu, cubed
- 1 tbsp vegetable oil
- 1 ½ cloves garlic, minced
- ½ red chili, sliced
- ½ red bell pepper, sliced
- ½ cup fresh Thai basil leaves
- ½ Juice of 2 limes
- ½ tbsp soy sauce
- ½ tsp sugar
Instructions
- Heat 1 tbsp oil over medium-high heat in a large pan or wok.
- Add tofu cubes; cook 5-7 min until golden, then remove and set aside.
- Add remaining oil; sauté garlic and chili until fragrant (~30 sec).
- Add bell pepper; stir-fry 2-3 min until tender-crisp.
- Return tofu; add soy sauce, sugar, lime juice, stir to coat and cook 1 min.
- Stir in basil leaves until wilted, then serve hot.
