Ingredients(scaled)

  • 1 cups all-purpose flour
  • 1 scoops of your favorite protein powder
  • 1 tbsp sugar
  • ½ tbsp baking powder
  • ½ 1/2 tsp salt
  • 1 large eggs
  • ½ 3/4 cups milk
  • 1 tbsp melted butter or oil
  • ½ tsp vanilla extract
  • ½ Maple syrup
  • ½ Fresh berries
  • ½ Greek yogurt
  • ½ Chopped nuts or seeds

Instructions

  1. In a large bowl, whisk together the flour, protein powder, sugar, baking powder, and salt.
  2. In another bowl, beat the eggs, then stir in the milk, melted butter or oil, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; a few lumps are okay.
  4. Preheat a non-stick pan or griddle over medium heat and lightly grease with butter or oil.
  5. Pour 1/4 cup of batter for each pancake onto the pan. Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
  6. Repeat with the remaining batter to make a stack of 12 protein-packed pancakes.
  7. Serve the pancakes stacked high, topped with maple syrup, fresh berries, a dollop of Greek yogurt, and a sprinkle of chopped nuts or seeds.
