- 1 cups all-purpose flour
- 1 scoops of your favorite protein powder
- 1 tbsp sugar
- ½ tbsp baking powder
- ½ 1/2 tsp salt
- 1 large eggs
- ½ 3/4 cups milk
- 1 tbsp melted butter or oil
- ½ tsp vanilla extract
- ½ Maple syrup
- ½ Fresh berries
- ½ Greek yogurt
- ½ Chopped nuts or seeds
Instructions
- In a large bowl, whisk together the flour, protein powder, sugar, baking powder, and salt.
- In another bowl, beat the eggs, then stir in the milk, melted butter or oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; a few lumps are okay.
- Preheat a non-stick pan or griddle over medium heat and lightly grease with butter or oil.
- Pour 1/4 cup of batter for each pancake onto the pan. Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
- Repeat with the remaining batter to make a stack of 12 protein-packed pancakes.
- Serve the pancakes stacked high, topped with maple syrup, fresh berries, a dollop of Greek yogurt, and a sprinkle of chopped nuts or seeds.
