Instructions

  1. Cook noodles in a pot of boiling water 2 minutes less than package; drain and rinse briefly.
  2. Pan-fry tofu in oil over medium-high heat 3–4 minutes per side until golden and crisp; remove from pan.
  3. In the same pan, sauté garlic, ginger, and mushrooms 2 minutes until fragrant.
  4. Add broth, miso, soy, and rice vinegar; simmer 4 minutes to blend flavors.
  5. Toss spinach in broth just until wilted, 1 minute; return tofu to pot to rewarm.
  6. Divide noodles into bowls, ladle broth with tofu and greens, finish with green onion, sesame oil, seeds, and lemon zest/juice.
