Simple One-Egg Pancakes

Ingredients(scaled)

  • ½ cup all-purpose flour
  • ½ tbsp sugar
  • ½ tsp baking powder
  • ½ 1/2 tsp baking soda
  • ½ 1/4 tsp salt
  • ½ cup milk
  • ½ large egg
  • 1 tbsp melted butter or vegetable oil

Instructions

  1. In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, beat the egg with milk and melted butter.
  3. Pour wet ingredients into dry and stir gently until combined, do not overmix.
  4. Heat a non-stick skillet or griddle over medium heat, lightly grease.
  5. Pour 1/4 cup batter for each pancake; cook 2-3 min until bubbles form and edges look set.
  6. Flip and cook another 1-2 min until golden brown. Serve warm.
