Herb-Crusted Baked Salmon with Herbed Baby Potatoes

Ingredients

  • 4 salmon fillets (6 oz each)
  • 2 tbsp olive oil
  • 1/2 cup breadcrumbs
  • 2 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh dill
  • 1 tbsp lemon zest
  • Salt and pepper to taste
  • 1 lb baby potatoes, halved
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a small bowl, mix breadcrumbs, parsley, dill, lemon zest, salt, and pepper.
  3. Place salmon fillets on the prepared baking sheet. Brush each fillet with olive oil and press the herb breadcrumb mixture on top of each fillet.
  4. Toss halved baby potatoes with olive oil, garlic powder, dried thyme, salt, and pepper. Spread them on the baking sheet around the salmon fillets.
  5. Bake in the preheated oven for about 20-25 minutes, or until the salmon is cooked through and the potatoes are tender.
  6. Serve the herb-crusted salmon with the herbed baby potatoes. Enjoy!
