Vegetarian Baked Ziti with Soyrizo

A comforting, meatless baked pasta dish featuring Trader Joe’s soy-rizo to mimic a spicy sausage crumble, baked with ziti, marinara, ricotta, and mozzarella for a hearty vegetarian casserole.

Ingredients

  • 12 oz Ziti pasta
  • 12 oz Trader Joe’s soyRizo
  • 3 cups Marinara sauce
  • 1 cup Ricotta cheese
  • 2 cups Shredded mozzarella
  • 0.5 cup Parmesan cheese
  • 1 tbsp Olive oil
  • 2 cloves Garlic
  • 1 tsp Dried oregano
  • 0.5 tsp Red pepper flakes
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook ziti in salted boiling water until just al dente, per package instructions; drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté 1 minute. Crumble Trader Joe’s soyRizo into the skillet and cook until lightly browned, about 5 minutes.
  4. Stir in marinara sauce, oregano, red pepper flakes, salt, and black pepper. Simmer 3–5 minutes to blend flavors.
  5. In a large mixing bowl, combine cooked ziti, soyRizo sauce, ricotta, and half of the mozzarella. Mix until evenly coated.
  6. Spread a thin layer of sauce in a 9x13 inch baking dish. Layer half the pasta mixture, then sprinkle with Parmesan. Add remaining pasta mixture and top with remaining mozzarella.
  7. Cover with foil and bake 20 minutes. Remove foil and bake for another 10 minutes, until cheese is melted and bubbly.
  8. Let stand 5 minutes before serving.
