Turkey Avocado Burger with Corn on the Cob

Ingredients

  • 1 lb ground turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 1 avocado, sliced
  • 4 burger buns, toasted
  • 4 leaves of lettuce
  • 4 slices of tomato
  • 4 slices of red onion
  • 4 corn on the cob, husked
  • 2 tbsp butter, melted
  • 1/2 tsp smoked paprika
  • 1/2 tsp chili powder
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat grill or grill pan over medium-high heat.
  2. In a bowl, mix ground turkey, breadcrumbs, Parmesan, parsley, garlic powder, onion powder, salt, and pepper. Form into 4 patties.
  3. Grill turkey patties for about 6-7 minutes per side or until fully cooked.
  4. While the patties are cooking, prepare the corn on the cob. Mix melted butter with smoked paprika, chili powder, Parmesan, salt, and pepper in a bowl.
  5. Brush the seasoned butter mixture over each corn cob.
  6. Grill the corn cobs for about 10-12 minutes, turning occasionally, until charred and cooked through.
  7. Assemble the burgers by placing a turkey patty on each bun, topping with avocado slices, lettuce, tomato, and red onion.
  8. Serve the turkey avocado burgers with grilled corn on the cob.
